Prawn Bisque Recipe

Serves 2-3 pax
Ingredients
1 packet CHU Collagen Premium Prawn Mee Soup
1 onion, diced
1 carrot, diced
1 celery stalk, chopped
3 cloves garlic, chopped
2 cloves shallot, chopped
30g unsalted butter
1 tbsp tomato paste
3 bay leaves
Thickened cream
Italian herbs (optional)
5 prawns, deshelled (optional)
Instructions
- Heat up butter in pot. Add garlic and fry till fragrant.
- Add carrot, onion and celery. Fry with small-medium heat until softened. Be careful not to brown the ingredients.
- Add shallot and tomato paste. Mix well.
- Add bay leaves.
- Add prawns if desired.
- Cook for another few minutes to ensure that prawn is cooked and ingredients are softened.
- Add Prawn Mee Soup.
- Mix well and bring to a boil.
- Switch off fire and let it cool for a few minutes.
- Add soup and ingredients to a blender and blend well.
- Put soup back in the pot and add thickened cream until desired consistency is reached.
- Serve. Sprinkle Italian herbs if desired.
Protips:
- Try before serving. If it is too spicy, add more cream.
- For a smoother consistency, put the soup through a strainer into the pot after blending. Be sure to squeeze and and mash out as much liquid as possible for maximum flavour.
